Balsamic strawberries & ricotta cream

The signature sweetness of strawberries and tart balsamic is rounded out by fresh basil and creamy ricotta. Serve it as a refreshing dessert for a taste of deep summer.

For the ricotta cream:

30mL honey
1/2 tsp vanilla extract
100g ricotta cheese

For the balsamic strawberries:

45mL balsamic vinegar
12g caster sugar
450g strawberries
5g fresh basil leaves

  1. To make the ricotta cream, start by mixing the honey, vanilla extract and ricotta together in a bowl.

  2. Once fully incorporated, allow to set in the fridge for at least 2 hours. 

  3. Combine the vinegar and sugar in a saucepan and bring to a boil.

  4. Simmer for approximately 2 minutes on a medium heat, stirring occasionally. 

  5. Remove from the heat and set aside to cool completely. 

  6. In a bowl, combine the strawberries, basil and cooled down balsamic vinegar.

  7. Serve the ricotta cream in a cocktail glass topped with the basil-balsamic strawberries.
