WHO WE ARE
The story of Nordhavn Eddike started back in 2010 with Claus Meyer and Andreas Harder; two friends with a shared love for vinegar. Claus is a well known Danish culinary pioneer who acted as a catalyst for the New Nordic Movement, and Andreas was a food technologist who really understood the magical character of vinegar.
It was a trip to Modena that changed everything. The traditional processes they witnessed piqued their interest and the duo returned to Copenhagen to start producing Danish vinegar. With a love for acid and respect for provenance, Nordhavn Eddike was born. The idea was to create a pantry basic of superior quality, that was full of complex flavours and environmentally conscious. The results are anything but basic.
NORDHAVN EDDIKE ORCHARD
Our orchard is on a small Danish island, south of Copenhagen, called Lilleø. With just 6 inhabitants, it has nutrient dense soils and the perfect weather conditions for our produce to thrive. The orchard is flush with fruits which form the base of our vinegars, from native pears, plums and quince to different apple varieties.
We’re devoted to better farming practices that contribute to biodiversity, soil health and nutritional density. We avoid chemicals and dot bee hives around the orchard to help with pollination. Through these practices we are raising the bar on flavour and launching vinegar to new heights of appreciation.
WASTE NOT, WANT NOT
Nordhavn Eddike is a product of many things: history, experimentation and living.
We take a holistic approach to food and farming. We know where our ingredients come from and where they go. Every bottle of vinegar can be traced back to its origins.
We use byproducts from neighbouring companies of high quality ingredients, alongside our orchard-grown fruit in the production of our vinegars. We also reuse the waste from any pressed fruits in our mother company, Nordhavn Manufactory, as much as possible. This ensures more circular products.
All of our vinegars are made in Denmark using local ingredients. Every part of the process is done by Nordhavn Eddike with respect for the natural world.
At our research and development space in Copenhagen, we experiment with traditional and new techniques in a bid to broaden the scope of vinegar. We’re the only people in Northern Europe doing this.
THE FUTURE
To explore flavour through acid, while contributing to a better food system. We’re making this happen through better practices, regionality and circularity. While we look to the future, we never forget our roots. Every bottle produced pays homage to the legacy of our founders.
